Coconut banana bread.

This banana sandwich based on coconut flour is delicious. Ideal for those who are gluten or lactose intolerant. No extra sugars have been added to this recipe and yet this banana bun is deliciously sweet and a good source of energy!


Ingredients:


  • 100 g coconut flour

  • 3 large ripe bananas.

  • 4 eggs

  • 50 g coconut oil

  • 2 tsp cinnamon

  • 1 tsp baking powder

  • 4 (Medjoul) dates.

  • 1 ampoule of vanilla extract or 1/2 tsp.

  • Pinch of salt

Directions:

  1. Preheat the oven to 180 degrees.

  2. Mix all dry ingredients together, coconut flour, cinnamon, baking powder and salt.

  3. Deseed the dates and chop them finely in a food processor (this will form a ball).

  4. Add banana and eggs in the food processor until smooth.

  5. Sprinkle in the dry mixture.

  6. Melt the coconut oil in the microwave for 30 - 45 sec.

  7. Pour this bit by bit into the food processor.

  8. Finally add the vanilla extract.

  9. Line a baking tin with parchment paper and place in the center of the oven at 180 degrees for 40 to 45 min.

  10. Let it cool down afterwards.

  11. You can easily keep it covered in the refrigerator for about 2-3 days.
