Fresh red pesto.

Pesto is an Italian sauce, originally made by grinding olive oil, basil leaves, garlic, sea salt, pecorino and / or Parmesan cheese, and pine nuts. You can play with the other ingredients and give it your own twist. Originally, the ingredients are mashed in a pestle.

Hence the name 'pesto’ originating from “pestaro” = to pound, crush or pestle.

But in this recipe I just use a food processor.

Ingredients:

Pesto:

  • 10 g Fresh basil.

  • 100 g Tomatoes

  • 120 g sweet pepper. (1 large)

  • 2 Garlic gloves.

  • 30 g pine nuts

  • 30 g Parmesan cheese.

  • 1.5 tsp salt

  • 0.5 tsp Spicy smoked paprika.

  • 1 tsp thyme

  • 10 g Olive oil


Directions:


Put all ingredients together in a food processor and mix until smooth.
