Puff egg cups.

Sundays are for brunches!

But sometimes we feel a bit less fresher than other days in the week... (Helloooo, hangover ...) and yet you want something tasty, but, .. you are a bit too lazy to cook a nice extensive brunch... No problem! Because this recipe will save you in distress!

I always have eggs and frozen puff pastry in stock.

You can easily play with the ingredients in this recipe and you can quickly conjure up a tasty savory breakfast / brunch that will happily melt your hangover away!


In this recipe you can easily switch the vegetables to your taste or the choice or with the leftovers in your fridge!


Ingredients:


Per cup:

  • 1 sheet of puff pastry (frozen or fresh)

  • 1 egg

  • 1 splash of (vegetable) cream.

  • 1 cherry tomato

  • 1 cube of spinach (frozen).

  • 1 tbsp turkey bacon

  • 1 Sprig of parsley.

  • Little bit of ground cheese.

  • Pepper and salt.

  • Garlic powder.


Preparation:


  1. Preheat the oven to 200 degrees.

  2. Grease a small, round baking dish with fat of your choice.

  3. I used frozen puff pastry that was already the desired size and shape. (square).

  4. If the previous step does not apply, cut the shape out of your puff pastry yourself.

  5. Moisten it with a little bit of water and place it into a small bowl.

  6. Bake this for about 10 min.

  7. (If frozen) Defrost the spinach leaves cube in the microwave on defrost or lowest setting.

  8. Fry the turkey bacon briefly without extra fat.

  9. Cut the cherry tomato.

  10. After 10 minutes, remove the bowl with puff pastry from the oven and let it cool completely before continuing the recipe.

  11. Divide the tomatoes and spinach over the puff pastry.

  12. Break the egg into the cup.

  13. Spread the bacon around the yolk and add a little (vegetable) cream all around.

  14. Finely chop parsley and sprinkle it over the egg together with some ground cheese.

  15. Season with salt, pepper and garlic powder.

  16. Place it in the oven for 10 min.


TIP!

If you are afraid that the edges will burn? Cover the edges with some aluminum foil to avoid burning.
