Savory biscuits with pear and feta.



Healthy and delicious alternative for ready-made salty cookies, enjoy these with an aperitif or just as a snack.

Ingredients:

20 cookies:


  • 2 pears (about 250g flesh).

  • 2 Eggs

  • 100 g Feta cheese

  • 75 g Oat flour

  • 50 g Oatmeal flakes.

  • 25 g Almond flour

  • 10 g Olive oil.

  • 30 g walnuts (about 1 hand).

  • 2 tsp Baking powder

  • 1/2 tsp Baking soda

  • 1 tsp rosemary

  • 2 tsp thyme

  • 1 tsp Garlic powder.

  • salt


Directions:


  1. Preheat the oven to 175 degrees.

  2. Peel the pears and grate them.

  3. Coarsely grind the walnuts in a food processor.

  4. Mix oat, almond flour, oatmeal together with the grinded walnuts, baking powder, baking soda and spices.

  5. Add grated pear, eggs and olive oil and knead until combined.

  6. Line a baking tray with parchment paper.

  7. Roll small balls of the dough, spread them over the baking tray and press gently flat.

  8. Bake for 20 min, then turn the cookies over and bake for another 20 min.


Eat them while they’re still warm (you can also heat them 20 - 30 seconds in the microwave afterwards).

The cookies store in a tightly closed box in the refrigerator for 2 to 3 days.


Delicious in combination with a yogurt dip consisting of:


  • Low-fat Greek yogurt or quark.

  • Fresh or dried thyme.

  • Pepper
