Savory brunch muffins.
Quick and easy breakfast or brunch, these can also perfectly serve as a breakfast / brunch on-the-go. You can also make them in advance! (But of course they are at their best, warm). Enjoy!
25 g Boursin garlic and fine herbs.
60 g chicken fillet (charcuterie).
15 g spring onion.
5 g Freshly chopped parsley.
Pepper and salt.
Beat the eggs.
Pour the eggs into a cupcake / muffin baking pan.
Cut the chicken into slices and divide them at the bottom of the eggs.
Crumble the Boursin over the muffins.
And sprinkle with the chopped fresh parsley and spring onion.
Season with salt and pepper.
Place them in the preheated hot air oven at 180 degrees for 15-20 min. (This can vary per oven so keep an eye on the muffins). You can also replace the chicken with other (smoked) meat delicacy or fish products, meat substitutes, cheese or simply add an extra egg.
