Savory porridge with Asian flavors.

Havermoutpap kennen we vooral zoet, maar hoe lekker is dit hartig! Ik haalde m’n inspiratie in de Aziatische keuken, waar ze vele varianten kennen zoals congee soep, rijstpap of rijstsoep. In dit receptje gebruik ik havermout en heeft zo een lage glycemische index!


We know oatmeal porridge mainly sweet, but how delicious is this savory! I got my inspiration from Asian cuisine, where they have many variants such as congee soup, rice pudding or rice soup. In this recipe I used oatmeal and so it has a low glycemic index!


Ingredients:

Per portion


  • 1 egg

  • 30 g rolled oats

  • 200 ml of water

  • 25 g snow peas

  • 25 g mushrooms

  • 1 stalk of spring onion

  • (Optional) 2-3 stalks of fresh cilantro.

  • 3 tsp fish sauce

  • 1 tsp vegetable stock

  • 2 tsp lemon juice

  • garlic powder

  • Peper

  • Black sesame seeds.


Directions:


  1. Cut the mushrooms into slices and chop spring onion and (optional) fresh coriander finely.

  2. Fry the snow peas and mushrooms.

  3. Fill a bowl with 200 ml of water, stock and oat flakes.

  4. Place in the microwave on the highest setting for 3 minutes. (Stir every minute).

  5. Fry a fried egg in some fat of your choice.

  6. If the porridge is too thick in consistency, you can always add a little more water.

  7. Stir fish sauce, lemon juice, pepper and garlic powder into the porridge.

  8. Arrange the fried egg, snow peas and mushrooms over the oatmeal and sprinkle finely chopped spring onion, sesame seeds and (optional) coriander over it.
