200g white asparagus
1 egg 50g cottage cheese
1/2 tbsp olive oil
1 tbsp finely chopped parsley
1 tsp lemon juice
Salt and pepper to taste
Peel off the skin of the asparagus with a peeler and cut off the bottom (the hard stem) of the stalks.
Bring a medium-sized pot of water to a boil and add a pinch of salt. Add the asparagus to the boiling water and let it cook for about 5-6 minutes, or until it's tender but still firm.
Drain the asparagus and let it dry on paper towels.
Meanwhile, heat a grill pan and grill the cooked asparagus on both sides.
Heat a small pan with some olive oil over high heat. Add the egg, cottage cheese, and lemon juice, and reduce the heat. Stir with a whisk until scrambled eggs are formed on low heat. (The cooking time depends on the desired consistency of the eggs.)
